As I visit the campus of Florida Atlantic University more and more in Boca Raton, I become more acclimated with the food choices on campus. Since the food court houses a Papa John's Pizza and I would sometimes rather eat M&M's for dinner instead of that crap, I decided to go with a friend to the bar/restaurant located within the Student Union called Coyote Jack's and see what type of offerings they had there.

It was with delight I noticed that they offer some flatbread pizza choices here. I ordered a half pie which was $5.99, and asked for it without the cheddar cheese they mix in it for some odd reason. Oh well, it is a college and I shouldn't expect normalcy. Especially from one which has had so much negative press lately.

Coyote Jack's seems to be the only bar/restaurant choice on the campus of FAU. Next to the register, I saw a comment box which asked for new names for this college bar, so I am quite certain they will be changing the name soon to something else.

The pizza took about 30 minutes to make since there was a lack of communication between the cashier and the cooks. Regardless, even after the kitchen being closed and cleaned, the chef made us our food since we most definitely got the order in prior to closing. When my buzzer started flashing bright blue, I headed up to the counter to grab my pizza. It looked delicious. Couldn't wait to try it.

After returning to my seat, I lifted up one of the well cooked corners and couldn't believe how crispy this was. Normally I would be upset that they overcooked the pizza, but this was amazingly crisp. I took the first bite, and I found it hard to believe I was located in some college hangout. This pizza was great. The crust tasted great with a smooth coating of sweet tasting sauce, and some extremely oily mozzarella cheese. If you don't like oily pizza, you might not care for this flatbread.

Maybe it was just a lucky evening for me, but this pizza will make me come back and get it again. For the price, and the taste, it is a great deal. It didn't leave me feeling bloated or fat after eating it. Others have told me they didn't care for the pizza since it was too soggy when they tried it, but as you can see, the extra minute or two they used to cook my specific pie, really helped it.
