The fire you see burning is gas natural or propane usually is is used to maintain the coals the oven automatically regulates the temp of the coals. Once they are at the right temp it is barely used. The coals are what gives the crust that "Old World" texture and taste. As far as the owner is concerned... John is one of the nicest guys and very open minded I'm sure the waitress forgot to tell him. If you go in there at night your sure to see him slaving away in front of that oven. The topping segregation thing I am sorry about can't explain that. Anyways I love the pizza its not loaded with grease which is what other pizza places have to do to get that goey cheese effect.
